balances the wine’s sweetness. Naturally, the sugar is a little higher
in this Demi-Sec than in the Brut bottlings, something readers will want
to keep in mind when choosing the right occasion to drink this wine.
That said, there are just a handful of wines made in the Demi-Sec style
that are truly worth considering, and this is one of them. It is a

of copper and sulfur in the vineyard, as he believes they upset the
natural balance of flora and fauna in the fields, using instead his own
homeopathic teas and essential oils. Wines are fermented on natural
yeasts, and each unique bottle is aged on its fine lees for as long as
possible before disgorgement.
