The terroir of “Chenevottes” is blessed with a bit more clay than linear chalk, and thus delivers more chewy, sultry flavors—a very regal cru that relishes flaunting a bit of curve. Yet with a nod to 2008, this sultry stuffing is not in any way overbearing, on the contrary; good acidic balance and great mineral expression is the hallmark of all of Bouard-Bonnefoy’s wines. Candied lemon and a bit of stewed Granny Smith mix with a touch of white chocolate and chalk on the mouth. Lots to love here.

There’s no ego here—even though Bouard, as a former bodyguard to French heads of state, has plenty of ground and reason to boast. His wines are utterly honest, unadulterated white Burgundy that comes at you with such pure, site-specific flavors that you wonder if all the other white Burgundies you’ve encountered were perhaps more style (and flash) than substance.
