Up in the hills the wind blows a bit harder, cooling temperatures and extending grapes’ ripening times a good two, three weeks longer than the rest of the Côte d’Or. That extra hang-time means more profound, savory flavors of blueberries and black raspberries; aromas suggest cassis and mixed peppers.
