In the 1960s, many Chablis producers tore up their vines to plant new clones which produced more fruit (to make more wine and thus more profits). It takes courage and integrity to not follow the herd. Being as old school as they get, Guy Robin balked at this idea. He stuck with his original vines, as he felt they translated the true character of Chablis terroir into wine far better than the new, high-yielding interlopers.<\/p>\n
In short, the old vines made Chablis, while the new vines just made Chardonnay.<\/p>\n
Granted, one can argue over the nature of authenticity for longer than it takes a grape to grow and ripen, but the proof, as always, is in the glass. What silences any argument for us are the layers and profound intensity of flavor that each bottle of Robin Chablis delivers.<\/p>\n
