Cotat Sancerre is simply some of the most singular Sauvignon Blanc in the world. Similar to his cousin Fran\u00e7ois, Pascal Cotat<\/strong> crafts uncanny wines that defy both time and definition. These are wines that can age for decades effortlessly, and that marry a plush richness with a laser-like cut and energy.<\/p>\n

The Cotat family has tended both Sauvignon Blanc and Pinot Noir on the slopes of the fabled Monts Damn\u00e9s in Chavignol since the end of World War II; in the 1990s the two Cotat brothers, Paul and Francis, handed over the family domaine to their sons, Fran\u00e7ois and Pascal, respectively.<\/p>\n

Today there are two wineries\u2014one in Chavignol, headed by Fran\u00e7ois Cotat<\/span><\/a>, and one in Sancerre, founded by Pascal Cotat and now helmed by his longtime vineyard manager Benoit Fleuriet and trusted assistant winemaker, Aymeric Fleuriet (Benoit\u2019s son).<\/p>\n

Pascal will continue to assist the Fleuriet family for a few vintages as they complete this necessary transition. Aymeric\u2019s first, independent vintage under the Pascal Cotat label will be 2025. A native of Sancerre, Aymeric is thrilled to take on the mantle from his long-time winemaking mentor and to uphold Pascal Cotat\u2019s legendary winemaking spirit and style.<\/p>\n

FARMING & WINEMAKING<\/strong><\/p>\n

Located in the western portion of the Sancerre appellation, Chavignol has a unique type of soil called, in French, \u201cterres blanches.\u201d The region is essentially a chalk plateau (the same vein as is found in Chablis) with clay and limestone soils. The top vineyards, \u2018Monts Damn\u00e9s,\u2019 \u2018Grande C\u00f4te,\u2019 and \u2018Les Culs de Beaujeu,\u2019 are perched on steep hillsides with little topsoil.<\/p>\n

Cotat as a rule harvests by hand and very late, as pushing ripeness to the extreme is one element that gives these wines their weighty texture and complexity. While the Pascal Cotat estate is not organically certified, they farm more or less according to organic principles, i.e. they do not treat their vines with pesticides; only indigenous yeasts are used for fermentation; and they follow the lunar cycle for racking. Wines are barrel-fermented in older demi-muids and aged in larger tonneaux. All wines are bottled unfined and unfiltered.<\/p>\n

Pascal Cotat\u2019s few vines in this very steep vineyard are at the top of the slope, where soil are thin and vines feed directly into the chalky \u201cmother rock.\u201d<\/p>\n
