Domaine Arnaud Baillot

Arnaud Baillot wasn’t born into a winemaking family, as is the case with so many generations-deep Burgundy domaines. He is a winemaker by choice, bringing a new energy and passion to this tradition-steeped region.

Originally from Auxerre, Arnaud and his wife Laure (the granddaughter of the founders of Domaine Hudelot-Noëllat) started their adventure as small-batch negociants. Knowing that the character-driven wines they wanted to craft would only possible when they farmed the land themselves, this focused pair put every penny they had into finding parcels they could own and tend organically.

Today the estate is 25 acres of prime land mostly in the Cote de Beaune; their wines are precise, aromatic expressions of Burgundian Chardonnay and Pinot Noir.

FARMING & WINEMAKING

Arnaud and family tend their 25 acres organically, but the estate is not certified. Estate holdings in the Cote de Beaune are centered around Meursault, Pommard and Beaune, as well as some plots in Volnay and Savigny.

Grapes are harvested by hand and vinifications are as natural as possible, with fermentations on indigenous yeasts with no added sulfites. Whites are fermented and aged in barrel with no more than 15% new oak each vintage; reds are fermented in tank with only light pump-overs (no punch downs) and then aged in barrel for 15 to 18 months, and bottled unfiltered.
